I've never had an interesting coding question posed in an interview, but I did have an interesting homework task assigned as part of the application process many years ago. They wanted me to implement a ML-based engine that determines optimal routes and schedules for freight trucking.
They gave me 4 weeks. I declined (it was an egregiously over-the-top ask), but I have to admit it was an interesting problem.
